Four Holiday Ideas from Crave Brothers Farmstead Cheese
Crave Brothers Farmstead Classics Cheese takes you from Thanksgiving through the New Year with rich dessert recipes that feature award-winning Mascarpone Cheese. From holiday brunches to seasonal celebrations, Crave Brothers Mascarpone elevates your desserts to holiday-worthy specialties. The sweet, creamy cheese has won more than 27 awards since its introduction, including a First Place Award at the 2018 World Dairy Expo Products Contest.
With the following dessert recipes, you’ll understand why. Incorporate these four sweet ideas into your seasonal repertoire to make every gathering a little more memorable. Nobody needs to know you didn’t spend all day cooking.
1. Mascarpone Mousse Cheesecake features the rich flavor and luxurious texture that characterize Crave Brothers Mascarpone. Rather than baking, this dessert is made more quickly, in a microwave and on the stovetop. The mousse combines gelatin, egg yolks, milk, Mascarpone, lemon zest, vanilla paste, sugar and whipped cream. After the mousse mixture is prepared, it is poured into molds or a freezer-safe mixing bowl, and then frozen. Serve Mascarpone Mousse Cheesecake with sugared cranberries, other fruit or berry sauce with a mint garnish.
2. Mascarpone Coffee Cream Trifle with Cake Croutons and Maple Coffee Sauce is a sumptuous ending to a holiday meal, thanks to the velvety creaminess of Crave Brothers Mascarpone. This one-bowl dessert incorporates pound cake from a frozen loaf. The trifle is best when assembled in a large glass bowl so that all the layers are visible. Layer the bottom of the bowl with pound cake croutons, then spread Mascarpone cream mixture flavored with confectioners’ sugar, cold instant coffee and vanilla. Top this layer with slivered dark chocolate, then chopped pecans that have been coated with a mixture of butter, maple syrup, cinnamon and brown sugar. Repeat the layers of cake croutons, Mascarpone cream, slivered chocolate and pecans two more times, then chill the dessert for an hour. Serve with warm Maple Coffee sauce. Make Maple Coffee Sauce by warming cream in a saucepan over low heat, then stirring in instant coffee crystals. Finally, add maple syrup and butter and stir until the mixture is bubbly. Allow sauce to cool before serving it warm with the trifle. The sauce also enhances gingerbread and other holiday desserts. 3. Mascarpone Walnut Thumbprint Cookies with Lemon-Orange Curd are an ideal choice for holiday buffets or coffee and dessert get-togethers. The cookie dough features butter and Crave Brothers Mascarpone. The citrusy curd is made with fresh-squeezed lemon and orange juice, egg yolks, cornstarch and sugar. (For a shortcut, substitute commercially available lemon curd that comes in jars.) Lemon-orange curd is added to the thumb print indentations in warm baked cookies that are then returned to the oven for an additional
3 minutes. For a garnish, drizzle the baked cookies with melted white chocolate baking chips to which a half-teaspoon of vegetable oil has been added.
4. Dress up Dessert in a Flash for last-minute guests. Think of Crave Brothers Farmstead Classics Mascarpone as your go-to ingredient for impromptu holiday gatherings. A dollop of creamy Mascarpone is the perfect garnish for berries, fruit pies or warm chocolate pudding. To complement other desserts, such as plum pudding, fruit cake, apple crisp or artisan ice cream, make Crave Brothers Mascarpone Caramel Sauce. All you need are butter, brown sugar, vanilla, rum or brandy, and Crave Brothers Classics Mascarpone. If desired, add chopped pecans to the sauce. Licensed cheesemaker George Crave oversees the making of all the Crave Brothers handcrafted artisan cheeses, made with milk from the family’s own dairy herd.
