Cowboy’s Stuffed Jalapenos with Pico de Gallo

- 24 Pickled Jalapenos
- 1 lb. grated Crave Brothers Farmstead Classics Les Frère, young
- 1 lb. grated Crave Brothers Farmer’s Rope
- 24 pieces cooked bacon-slightly brown, not crispy
Cut stems off the jalapenos. Slit down one side of each. Stuff each jalapeno with 1 ounce of each of the cheeses. Wrap the pepper with bacon. Put 3-4 on a skewer and grill for 5 minutes on each side. Or, bake in a pre-heated oven at 425 degrees for 12-15 minutes. Serve with Pico De Gallo.
Pico De Gallo
- 5 large tomatoes, diced
- 1 large onion, diced
- 2 Jalapeno, finely diced
- ½ bunch Cilantro, stemmed and chopped
- 3 T. lime juice
- ½ t. salt
Combine all ingredients, stir gently.
