Spinach Quiche with Brown Rice Crust

- 2 cups cooked brown rice
- 1 cup Crave Brothers Farmstead Cheese-Farmer’s Rope, cut into small pieces
- 1 egg
- 4 cups fresh spinach or 9 ounces frozen chopped spinach
- 2 eggs
- ¼ cup grated parmesan cheese
- ¼ cup onion
- ¼ teaspoon nutmeg
- 1 cup Crave Brothers Farmstead Classics-Mascarpone
- ¼ cup half and half
- 1 Tbsp fresh lemon juice
- 1 Tbsp butter
Preheat oven to 350°. Grease a 9” pie pan. Combine cooked rice, cheese and egg, blend well. Spread rice mixture evenly over bottom and sides of pan, pressing lightly with fork to form crust. Cook spinach, drain thoroughly. In large bowl, beat eggs. Add cooked spinach and remaining ingredients; blend well. Pour filling into crust. Bake for 40-50 minutes or until inserted knife comes out clean. Let stand a few minutes before serving.
Note: Tastes great as leftovers too!
