Crave Brothers Cheddar Cheese Curds have a squeaky texture and a mild, salty flavor. They’re available in white cheddar, yellow cheddar and jalapeño varieties. Crave Brothers Cheese Curds won Second Place in the 2019 U.S. Cheese Championships, Natural Snack category. As it happens, May is also National Salad Month. Crave Brothers Cheese offers this inspired barbecue-compatible salad idea from Chef Luke Zahm of the Driftless Café in Viroqua, Wisconsin. Chef Zahm’s easy-to-make Panzanella Salad features Crave Brothers Ciliegine Fresh Mozzarella and a creamy Truffle Dressing.

To make The Driftless Café Panzanella Salad, start by dicing a small loaf of crusty bread and browning the pieces in olive oil, then seasoning the croutons with salt and pepper. In a large salad bowl, combine seeded English cucumber slices, heirloom tomato wedges, thin strips of red onion, shredded fresh basil leaves, whole mint leaves and Crave Brothers Ciliegine Fresh Mozzarella. Create the truffle dressing by whisking together a cup of buttermilk, ¼ cup mayonnaise, and two tablespoons of truffle oil along with salt and pepper. Toss the salad and serve with barbecued ribs, steaks, burgers or seafood for a complete meal. Simple!
