To make The Driftless Café Panzanella Salad, start by dicing a small loaf of crusty bread and browning the pieces in olive oil, then seasoning the croutons with salt and pepper. In a large salad bowl, combine seeded English cucumber slices, heirloom tomato wedges, thin strips of red onion, shredded fresh basil leaves, whole mint leaves and Crave Brothers Ciliegine Fresh Mozzarella. Create the truffle dressing by whisking together a cup of buttermilk, ¼ cup mayonnaise, and two tablespoons of truffle oil along with salt and pepper.
