Celebrating National Soup Month with Petit Frère

While it might not seem very cold outside, the weather channels are threatening snow in the next few days. We've been looking for an excuse to celebrate National Soup Month and this just might be it. Brennan's Market shares some fabulous recipes that we can rarely ignore. One that we especially love is their Butternut Squash Soup with Petit Frère. It's a take on a traditional creamy soup and the topping of a French onion soup - all in one. Drooling yet? Get a napkin, wipe off your face and create this delicious soup at home tonight!

Butternut Squash Soup with Petit Frère

Ingredients:
    2 pound butternut squash, peeled, chopped
    2 tablespoons Brennans Extra Virgin Olive Oil
    1 tablespoon kosher salt
    1 Spanish onion, chopped
    11/2 quarts rich chicken stock
    1/2 cup heavy cream
    6 slices Petite Frere, 1/4 inch thick, at room temperature
    3 tablespoons pumpkin seeds (pepitas), toasted


Preparation:

Preheat the oven to 400°F. 
In a shallow baking pan, toss the squash with the oil and salt. Roast 20 minutes or until tender. 
In a soup pot, combine the squash, onions, and chicken stock. Simmer until onions are very tender, about 20 minutes. Puree the soup with an immersion blender until smooth. If too thick, add additional chicken stock. Adjust the seasonings and add the cream. Serve hot in soup bowls. Top each serving with a cheese slice and pumpkin seeds. Serve immediately.
