A Walk In the Woods grilled cheese

Makes 1 sandwich

2 slices Sourdough bread
1/4 teaspoon truffle oil
2 Tablespoons butter
3/4 lb Les Frères, rind removed and cut into 1/4-inch slices
6 spears asparagus
1 Portabella mushroom, slices 1/4-inch thick
Olive oil
Salt and pepper to taste

Preheat oven to 400 degrees. Line baking pan with foil. Slice asparagus the long ways, place in bowl and toss with olive oil, salt and pepper to taste. Place asparagus on foil lined pan and bake in oven for 8 minutes, set aside. In a saute pan, saute portabella mushroom slices with 1 Tablespoon of butter until tender, set aside.  While the mushrooms are cooking, mix the truffle oil and remaining butter together; spread evenly on one side of each piece of bread, set aside. Wipe saute pan with a paper towel to remove excess butter and grease from mushrooms.

To assemble sandwich; place buttered side down, top with half of the Les Frères slices, place the roasted asparagus and mushroom slices evenly across the cheese; top with remaining Les Frères and slice of bread(butter side up). Heat sautè pan to medium heat and grill sandwich for 3-4 minutes on each side. Once finished, place the sandwich on a cutting board to cool slightly before cutting.
