Bacon Wrapped Shrimp with Les Frères Cheese Sauce

Notes from the author: My friend challenged me to find some uses for Les Frères. When thinking about smoking the cheese in my regular smoker I use for meat, I thought that the addition to cumin to a cheese sauce to go over a smoky bacon covered shrimp would be delicious.
2 pounds 16-20 raw shrimp
1 - 2 pounds thick cut bacon
Slivers of Jalapeno (optional)
Cut bacon into thirds. Wrap bacon around shrimp, secure with toothpick. If you want to use the Jalapeno, put on shrimp before wrapping.
Grill on low until bacon has reached desired doneness. As another option, can be pan fried.

3 Tablespoons butter
3 Tablespoons flour
½ teaspoon salt
1 teaspoon ground cumin
¼ teaspoon ground pepper (white or black)
1 ½ cups milk
1 cup Les Frères (rind removed, cut up finely or shredded)
Melt butter; remove from heat. Stir in flour and seasonings. Gradually add milk, stirring until well mixed. Cook over low heat, stirring constantly, until thickened and smooth. Cook for 5 minutes longer; add cheese. Stir until smooth and well blended. Drizzle shrimp with cheese sauce and enjoy.
