Bran Muffins

Ingredients:

  • 3 cups bran cereal
  • 1 cup boiling water
  • 1/2 cup vegetable oil
  • 2 eggs, beaten
  • 1 1/2 cups flour
  • 1 1/2 cups sugar
  • 2 1/2 teaspoons baking soda
  • 2 cups plain yogurt

Directions:

Preheat oven to 400° F.  In a large bowl, combine cereal and water.  Stir in oil and eggs.  Add remaining ingredients and blend well.  Place muffin paper liners in each muffin cup.  Spoon batter into muffin cups, fill 3/4 full.  Place in oven, bake 18 to 22 minutes or until lightly brown.

 

Yield:  24 muffins
