Mediterranean Barley Salad

Ingredients:

  • 1 cup barley, cooked according to package instructions, cooled
  • 7 sun dried tomatoes, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1/2 cup chopped cilantro, optional
  • 1/2 cup chopped kalamata olives

Directions: In a medium size bowl, mix sun dried tomatoes, garlic, olive oil and balsamic vinegar together.  Gently add and mix in cilantro, olives, and barley.  Cover and refrigerate until cold.

 

Yield:  6-8 servings
