Romaine Salad with Apples and Pears

Ingredients:

  • 10 cups romaine lettuce, washed, drained and torn in pieces
  • 1 cup Swiss cheese, shredded
  • 1 Braeburn apple, cored and chopped
  • 1 green pear, cored and chopped
  • 1/2 cup dried cranberries
  • 1 cup cashew pieces

Dressing

  • 1/2 cup sugar
  • 1/3 cup cider vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons onion, finely chopped
  • 1/2 teaspoon salt
  • 2/3 cup vegetable oil

Directions: In a large mixing bowl, toss all salad ingredients together.  For dressing, add all dressing ingredients in the food processor bowl, blend well.  Pour over salad ingredients, toss until well blended.

 

Yield:  10 servings
