Sour Cream Green Chile Mac n Cheese

Notes from the author: One of my favorite flavor combinations is sour cream and green chiles. Another favorite is Crave Brothers Farmstead Classics Les Frères. The creamy goodness seemed like a perfect pairing with sharper cheeses, sour cream and green chiles. I usually double the recipe for potlucks. The people in the back of the line thank me for it!

Yield – 12 servings


8 oz sour cream
2 7-oz. cans of chopped, mild green chiles (or get brave and go with hotter chiles, even jalapenos)
1 lb pasta, cooked (elbow, penne, all shaped pastas will work)
12 oz sharp cheddar cheese (I often combine the varieties I love most), shredded
16-24 oz. Crave Brothers Farmstead Classics Les Frères (to taste), diced about 1/4”cubes
salt and pepper to taste (I prefer white pepper)


While pasta cooks, combine sour cream and chiles and set aside. Combine cheeses.

Preheat oven to 375ºF.

Layer one half of the pasta, top with ½ the sour cream mixture, then ½ the cheeses. Repeat the layers.

Bake 35-40 minutes until bubbly. White cheddars will not brown much, but they will develop a crust.
