Winter Creamy Super Soup Recipe with Crave Brothers Farmstead Cheese
Waterloo, WI, January 28, 2020—Creamy Mascarpone Mushroom Soup just may be the ultimate winter soup. Debbie Crave of Crave Brothers Farmstead Cheese created the rich recipe. The soup is satisfying enough to serve as a meal along with a small salad and a loaf of crusty bread, casual enough to pour into mugs for game-day parties or informal get-togethers, and luxurious enough to present as a dinner party appetizer. What truly sets the soup apart, though, are its velvety texture and the sweet creamy flavor notes of Crave Brothers Farmstead Classics Mascarpone.
To make the soup, sauté green onions in butter in a saucepot and then add a mix of assorted wild mushrooms. Cook until the mushrooms are tender. Add chicken broth, port wine and dried thyme. Allow the soup to come to a boil, and then reduce the heat and simmer it for about 20 minutes to give the flavors a chance to marry. Working in batches (a couple of cups at a time), ladle the soup into a blender or food processor and puree. Or, use an immersion blender to puree. As each batch is completed, pour it into a single large bowl. Leave a cup of two of the broth unpureed so that some mushroom slices remain. Return the pureed soup to the saucepot and stir in a container of Crave Brothers Farmstead Classics Mascarpone, heavy cream, a squeeze of lemon juice and a bit of ground black pepper. Heat the soup over low heat and just before serving add the unpureed mushroom broth. Garnish with Crave Brothers Fresh Mozzarella Perlines (pearl-size balls).
