Shredded BBQ’D Beef


  • 5 pound chuck roast
  • 1/2 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 4 cups water
  • 2 3/4 cups ketchup
  • 1 tablespoon dry mustard
  • 1 large onion, chopped
  • 1 to 2 cloves of garlic, minced
  • 12-14 sesame buns
  • 1 red onion, sliced
  • Sharp Cheddar cheese, grated, as needed

Directions: In a 6 quart cast iron or other heavy, oven proof pot, combine beef, brown sugar, vinegar and water.  Place in oven and bake at 375° F for 3 hours.  Remove from oven;  cool.  Remove all fat and any bones.  Shred beef and return to pot.  In a small bowl, add ketchup, mustard, onion and garlic, blend well.  Add this mixture to the beef and mix well.  Reduce oven temp to 300° F, cook uncovered for up to 4 hours.  Stir every half hour adding more water and ketchup if needed to keep moist.  Serve on buns with onion and cheese.

Yield:  12-14 servings
