Chocolate-Cream Cheese & Mascarpone Pie

Notes from the author: The boys were over one morning unloading straw, so I came up with this recipe. I have made a habit (not wise!) of serving the hay/straw unloaders pie after they finish. They all thought the recipe was a keeper.


1 nine inch baked pie crust or chocolate crumb crust
1- 3 ounce pkg. cream cheese, softened
1/2 cup Crave Brothers mascarpone cheese
3 tablespoons powdered sugar
1/4 teaspoon vanilla extract
1 cup heavy whipping cream
3/4 cup milk
1 small box chocolate instant pudding (or any pudding of your choice)
1 1/2 cups soft vanilla ice cream


In mixing bowl, combine cream cheese, mascarpone cheese, sugar and vanilla.  Mix well with electric mixer.  Beat in whipping cream until soft peaks appear.  Spoon into cooled, baked crust.

Using electric mixer, mix together milk and pudding.  Mix in ice cream until combined well.  I use the metal whipping attachment on my mixer.   Pour over the cream cheese mixture.  Chill several hours.

Can serve with whipped cream.
