Crave Brothers Classics Brandied Apricots and Mascarpone Delites

  • 8 ounces Crave Brothers Farmstead Classics Mascarpone, room temperature
  • 1-8 ounce container extra-creamy whipped topping
  • 1/2 teaspoon amaretto extract
  • 1 pinch salt
  • 1 teaspoon lemon zest
  • 1 pound cake, sliced 1/2 inch thick and cut into 10-12 discs (use a biscuit cutter)
  • 1 can apricot halves in heavy syrup, drained, (reserve syrup), diced
  • 2 tablespoons brandy
  • toasted slivered almonds


In a large bowl, whisk mascarpone cheese to loosen.  Add whipped topping, amaretto extract, salt and lemon zest.  Fold to combine.  Put a large spoonful of mascarpone mixture on each cake disc.  In a small saucepan, combine reserved apricot syrup and brandy over high heat and reduce until thick, about 10 minutes.  Add diced apricots, stir.  Spoon apricot mixture over each disc.  Garnish with remaining whipped topping and toasted almond slivers.

Yield:  10-12 servings
