Favorite Bruschetta

  • 3 large Roma tomatoes, diced
  • 1 clove minced garlic
  • 1/4 cup olive oil, divided
  • 2 teaspoons balsamic vinegar
  • 1 tablespoon chopped fresh basil
  • Fresh ground pepper to taste
  • 1-10 inch baguette, sliced lengthwise in half and then sliced into 2-3" lengths
  • 1/2 cup pesto, divided
  • 2-8 ounce Crave Brothers Farmstead Classics Fresh Mozzarella, cut into 1/4 inch slices
  • 1/2 cup shredded Asiago cheese

Directions: Combine tomatoes, garlic, 1 tablespoon olive oil, balsamic vinegar, basil and pepper.  Set aside.  Place baguette slices on baking sheet with cut side facing up.  Brush with remaining olive oil and broil 2 minutes or until golden.  Take out of oven;  spread each slice with pesto, top with slices of fresh mozzarella.  Sprinkle reserved tomato mixture evenly over cheese, and sprinkle with Asiago cheese.  Serve immediately.


Yield:  8-10 servings
