About the Recipe
* Icing can be rolled into wax paper or parchment paper in a cone shape with a small tip cut out
and squeezed or you can use a cake decorating piping bag and tip of your choice.
Ingredients
1/2 cup plus 1 tablespoon unsalted butter, at room temperature
1/3 cup plus 1 tablespoon Crave Brothers Farmstead Classics Mascarpone Cheese, softened
¾ cup granulated sugar
1 tablespoon plus 1 teaspoon orange zest
3 tablespoons fresh orange juice
1/2 teaspoon salt
1 large egg
2 cups all-purpose flour
1/3 cup coarsely chopped macadamia nuts
1/3 cup white baking morsels
1 cup sifted confectioner's sugar
1/4 teaspoon orange extract
3 drops red food coloring
4 drops yellow food coloring
Preparation
Preheat oven to 325 degrees F. Lightly grease cookie sheets with butter.
In a medium bowl with a large spoon, stir together 1/2 cup butter, 1/3 cup mascarpone cheese, granulated sugar, 1 tablespoon orange zest, 3 tablespoons orange juice, and salt until smooth. Mix in egg. Stir in flour till mixed. Fold in nuts and morsels.
Shape into 1 & ¼ inch balls and place on a very large baking sheet, 2 ¼ inches apart. Gently flatten into 1 & ¾ inch circles. Bake 10 to 15 minutes, until edges are set and middle is firm. Cool.
Meanwhile, in a small bowl combine 1 tablespoon butter, 1 tablespoon mascarpone,
and confectioner's sugar and stir till mixed. Add orange extract and food colorings and mix
till smooth. Drop or pipe* on top of cool cookies.
